Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

For the Pasta:

  • 12 ounces fettuccine pasta (or preferred pasta type)
  • 4 cups water (for boiling)
  • 1 teaspoon salt

For the Alfredo Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 ½ cups Parmesan cheese, freshly grated
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • ½ cup pasta water (reserved from cooked pasta)

For Garnish (Optional):

  • 2 tablespoons fresh parsley, chopped
  • Extra grated Parmesan cheese

Instructions

Step 1: Prepare and Cook the Chicken

  1. Season the chicken breasts with salt, black pepper, and garlic powder.
  2. Heat olive oil in a pan over medium heat.
  3. Cook the chicken for 5-7 minutes per side until golden brown and fully cooked (internal temp: 165°F / 75°C).
  4. Remove from heat, let it rest for 5 minutes, then slice into strips or cubes.

Step 2: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine pasta and cook until al dente (about 10 minutes).
  3. Reserve ½ cup of pasta water, then drain the pasta.

Step 3: Make the Alfredo Sauce

  1. In the same pan used for the chicken, melt butter over low heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Pour in heavy cream, stirring constantly. Let it simmer for 2 minutes.
  4. Gradually add Parmesan cheese, stirring until fully melted and creamy.
  5. Season with salt, black pepper, and Italian seasoning (if using).

Step 4: Combine Everything

  1. Toss the cooked pasta into the Alfredo sauce, mixing well.
  2. Add sliced chicken and stir gently to coat everything.
  3. If the sauce is too thick, add a little pasta water to loosen it up.

Step 5: Serve and Enjoy!

  1. Garnish with fresh parsley and extra Parmesan cheese.
  2. Serve hot and enjoy your homemade Chicken Alfredo Pasta!

Notes

  • Don’t use pre-shredded Parmesan – It won’t melt properly due to anti-caking agents.
  • Low-fat alternative – Swap heavy cream for half-and-half or Greek yogurt for a lighter version.
  • Storage tip – Store leftovers in an airtight container in the fridge for up to 3 days.
